YUMMY, CRISPY CORN DOGS

Did you know that there is actually a National Corn Dog Day?
It is on March 22nd…we already missed it!
One of my daughters wanted my Corn Dog recipe, and here it is.
It is very crispy, chewy and delicious.
Every now & then, a Corn Dog…..hits the spot.

You will need:

1 cup yellow cornmeal
1 cup flour
1/4 teaspoon salt
t1/8 teaspoon pepper
1/4 cup sugar
4 teaspoons baking powder
1 egg
1 cup milk
1 quart vegetable oil for frying
2 16 oz. Packages beef hot dogs
16 wooden skewers – I use Popsicle sticks, if I don’t have skewers on hand

In a medium bowl combine cornmeal, flour, salt, pepper, sugar and baking powder. Stir in egg and milk. Preheat oil in a Fry Daddy or deep saucepan over medium heat. Insert wooden skewers into hot dogs. Make sure the hot dogs are good & dry. Roll hot dogs in batter until well coated. Fry 2 or 3 corn dogs at a time for 8 to 10 minutes or until golden brown. Drain on paper towels. Serve with ketchup, mustard or Fry Sauce.
