WHITE CHOCOLATE & NUT TRUFFLES

These luscious treats are made of melted white chocolate, butter, egg yolks and whipping cream. It’s chilled, formed into balls and rolled in your favorite nuts, or coconut. (I used Almonds) Next time, I think I will toast the coconut, which would be even more delicious. You could also roll the balls in chocolate, then roll in your desired nut. Simple, Simple to make!

 Ingredients:
 9 oz white chocolate, cut up
 6 oz butter at room temperature
 3 egg yolks
 3 oz heavy whipping cream
 Ground or chopped nuts (to taste)
You could also toast your nuts

 Directions:

Melt chocolate and butter over a pot of simmering water. Heat cream to a simmer; gradually beat into egg yolks. Return to saucepan and stir until slightly thickened. Add cream mixture to the melted chocolate, mixing well. Refrigerate until firm. With a small ice cream scoop, scoop out truffles and place on waxed paper. Roll in nuts; cover and refrigerate until serving time.
