I love Easter, not only for what it represents,

but

The Colors of Easter make me Happy!

Today . . . I had some Color fun. 

I made some Happy Cupcakes!

 It might have been snowing like crazy here today, but it was Spring in this house!

I also made some funky colored Caramel Corn.

See . . . Now you’re Happy! 

I made THIS Chocolate Cupcake Recipe

and THIS yummy homemade MARSHMALLOW Frosting.

These Brownie Pops also say “Hello Easter” . . . They would make you Happy!

I made this fast and Easy Caramel Corn Recipe, and simply added some Neon Food Coloring. 

CHOCOLATE CAKE or CUPCAKES

3 cups flour
2 cups sugar
1/3 cup Hershey’s Cocoa powder
1 cup Crisco Oil
2 eggs
1 cup Buttermilk
1 cup Hot tap water
2 teaspoons Soda
1 teaspoon Salt
1 teaspoon Vanilla.
 
DIRECTIONS:
The amazing thing about this cake recipe, is that you put all the ingredients in your bowl at the same time. Using a hand mixer, blend the ingredients until well mixed. Don’t over blend, a few small lumps are fine. Before putting in your pan, grease & flour them.  Once you have added the cake mixture, tap lightly on the top of a table or cabinet, to release any air bubbles. Bake 20-25 minutes at 350 degrees.
 
I usually bake my cake on a large deep Cookie sheet. (Like those you can buy at Rush’s Kitchen Supply) They now come with lids!
If making cupcakes, this recipe will make 24 good size cupcakes. 
 
 
MARSHMALLOW FROSTING
Beat together:
 2 egg whites and 1/4 tsp. salt 
until very very Frothy.
Slowly add:
1/4 cup white sugar
Beat until very smooth thick and glossy.
Slowly add:
3/4 Cup light Karo Syrup.
Beat until stiff, stiff, stiff Peaks form.
Gently:
Fold in 1 tsp. Pure Vanilla
 
*Note:  Beat this until very, very, very stiff peaks form!
 
Frost cupcakes, cake or pipe on.
Don’t cover cake tightly.

      Hi Jennifer,
      It really isn’t the egg whites that you would have a problem with.
      We’ve been eating this Marshmallow frosting since birth! It’s my husbands favorite.
