One of my very favorite meals is Tacos.
I make them every Tuesday . . . not really!
By now, you already know that we are pretty plain jane in this house. I’ve debated for a while now, on whether or not to even share this. Too simple! This Taco recipe might just seem too bland for some of you, but for others it might just hit the spot. You could leave the red kidney beans out of the ground beef, but it does provide a good dose of fiber! My mom always put these bright red beans in tacos while I was growing up, and now tacos just don’t taste right without them. This recipe, isn’t really a recipe, but here’s what I do.
Simple, Easy, Fast & delicious!
1 pound of ground beef
1 can of drained and rinsed Red Kidney beans (optional)
Salt & pepper to taste
1/2 tsp. onion powder
1 teaspoon sugar
1/2 cup ketchup
1/4 cup salsa
1/3 cup water
1 pkg Taco seasoning mix
*I like many brands, but usually buy the Taco Bell brand.
I only use about 2 tablespoons, but you could use the entire package if you like.
Brown the ground beef and drain all the grease off of it. (Once I get all the grease off that I can, I take paper towels and squeeze the cooked ground beef in between the towels, to make sure that the grease has been removed thoroughly). Add all remaining ingredients, and simmer over low heat. If you desire it to have more sauce, simply add a bit more water and a bit more ketchup. The ketchup gives it a better flavor than tomatoe sauce does.
Serve with corn or flour shells, lettuce, grated cheese, tomatoes, olives etc.
