STRAWBERRY FROZEN SQUARES
This dessert is really scrumptious! You can also substitute raspberries for the strawberries. It’s a great dessert for company, or for showers. Everyone seems to enjoy it.
In a bowl, combine flour, brown sugar, nuts, and butter. Press mixture onto greased baking sheet. Bake at 350 degrees for about 8 to 10 minutes, or until golden brown; remove from oven and cool. With a fork, break crust into crumbs. Sprinkle half of the crumbs into a greased 9×13 inch pan. Set remaining half aside.
In a large bowl, beat egg whites on high speed for about 6 minutes. Gradually & slowly, add sugar and lemon juice. Beat 3 to 4 minutes more, or until stiff peaks form. Set aside. In another bowl, whip and sweeten cream, then use a hand mixer to mix strawberries and whipped cream together. Gently fold strawberry mixture into egg-white mixture; spoon evenly over crumbs. Sprinkle remaining crumbs over the top. Freeze at least 6 hours before serving. Cut into squares. Enjoy!
