YOU WILL NEED:
1 (10 oz.) pkg. chopped broccoli, chopped or fine pieces
2 green onions, minced (optional)
6 chicken breasts (boneless, skinless)
1 c. bread crumbs or Ritz cracker crumbs
1/2 tsp. paprika
1 Tablespoon flour
1/8 tsp. black pepper
1- 1/2 Cups Monterey Jack cheese or you can use Colby or Cheddar
(whichever you prefer)
6 thin ham slices
1 Tablespoon parley, chopped
Butter
1/4 tsp. salt
1 Cup Milk
Combine broccoli, onions, and 1/2 cup shredded cheese. Pound each breast to 1/4 inch thickness. Top with a piece of ham then about a Tablespoon of the broccoli mixture. Fold each breast over filling; tuck the ends under. Mix crumbs, parsley & paprika together in a flat dish. Brush chicken with melted butter, then dredge chicken in the crumb mixture. Bake at 375 degrees for about 45 minutes, or until chicken is tender. Serve with lots of Cheese Sauce.
CHEESE SAUCE
(I double this…so that their is a generous amount of sauce)
Melt 2 tablespoons butter; add flour, salt, and pepper. Cook stirring constantly for 30 seconds, then add milk with wire whisk; cook until thickened. Add remaining cheese. Serve over chicken.
