This is a super easy Slow Cooker Recipe, that I’ve made many times. It will take you 10 minutes to throw together in the morning, before you begin a busy day. It cooks on low for 8 to 9 hours, and the pork chops are fork tender. Use your favorite Barbecue sauce. I really like Sweet Baby Rays. I have used Chicken Breasts in place of the pork, and it’s also very good. If you don’t want to add the vegetables, that’s o.k. as well. Just make the sauce, and pour it over Chicken, Pork or Beef. It’s a great sauce for any type of meat. Enjoy!
Slow Cooker – BARBECUE PORK CHOP SUPPER
YOU WILL NEED:
6 small Red Potatoes, cut into quarters
6 medium carrots, cut into small pieces
8 bone-in pork loin or rib chops (1/2 ” thick)
1 teaspoon salt
1/4 teaspoon pepper
1 bottle (28 ounces) barbecue sauce
1 cup ketchup
1 cup Cola
2 tablespoons Worcestershire sauce
DIRECTIONS:
Place potatoes and carrots in a slow cooker. Mine is a 5 quart. Top with pork chops. Sprinkle with salt and pepper. Combine the barbecue sauce, ketchup, cola and Worcestershire sauce; pour over the chops. Cover and cook on low for 8-9 hours or until meat and vegetables are tender. This is also good served over a bed of rice or hot buttered pasta.
