Moms Shepherd’s Pie

One of my favorite meals if Shepherd’s Pie. I love the mashed potatoes with melted cheese on the top. If you have picky eaters, you can add the vegetables that you know your family will eat & enjoy. This was a staple in our home when I was growing up.

SHEPHERD’S PIE
1 medium onion chopped (opt)
I use Onion powder instead for flavor
1 pound Lean ground beef
Salt & pepper to taste
2 cans Tomato Soup
1 can cut green beans
1 can corn or 1 small bag of frozen corn
4 good sized potatoes – boiled until soft
1/2 cup warm milk
1 egg beaten
4 Tablespoons melted butter
Grated Cheddar cheese for the top
Directions:
Brown onion and hamburger. Add seasonings & soup. Add the drained green beans and drained can corn, or add the frozen corn. Mix well. Pour into greased 9×13 pan. Mash your potatoes and add the milk, egg, butter and seasonings to taste until smooth & creamy. (Add more milk if needed to make the mashed potatoes like you want them). Place mounds of potatoes on top of meat mixture, or spread like a frosting over the top. Grate lots of Cheddar cheese over the top. Bake at 350 for about 30 minutes or until hot & bubbly.  Serve with Crusty French bread & a green salad.
