Take a look at these sweet little cupcakes. I almost made Lemon Jello Cake but put a twist on it! I made Angel Food Cake mix by scratch…..yes I did! I poked some lovely little holes through the tops of those golden cupcakes, and glazed them. This wasn’t any run of the mill glaze, but luscious lemon glaze with a hint of vanilla. If you make these cupcakes, make sure that you use freshly squeezed lemon juice from real lemons. Please don’t use the bottled juice, as it won’t be the same kind of deliciousness.
