ROLLED OAT CLUSTERS
Most of you have probably already made this scrumptious little candy cookie. If you haven’t, you are really missing something delicious in your life. They are fudgy, coconutty, little bites of heaven, especially when they are warm, and first plopped on your wax paper lined cookie sheet. If you want to make something, sinfully rich, and hard to resist, make these easy no bake cookies. Growing up, these were my children’s favorite. The key to making these, is to make sure that you cook them very slowly (low heat) until the sugar is dissolved all the way. They will not turn to sugar if you do this, and they will be extra creamy & smooth.
YOU WILL NEED:
2 Cups Sugar
1/2 Cup Milk
1/2 C. Margarine or butter (1 stick)
3 Tablespoons Cocoa
1 tsp. vanilla
1 1/2 C. peanut butter
1/2 tsp. Salt
3 Cups Oatmeal
*I use quick cooking oats
1 C. Coconut
DIRECTIONS:
Mix all ingredients in saucepan, over LOW HEAT. Bring to a slow boil and make sure that sugar as thoroughly dissolved. Pour mixture into bowl, without scraping sides of your pan.
Add: 1/2 tsp. salt, 3 Cups Oatmeal, and 1 cup coconut. Mix well & drop by Teaspoonfuls on waxed paper. Let cool. Store in a well sealed container, layer between wax paper.
