Rocky Road Brownie Mini Pies

It’s been said . . . Never ask a favor of someone, till you give them something sweet!

KT0C8435wSo . . . here is your sweet!  I wish I could just hand each of you one right now.  You’ll just have to pretend that your sinking your teeth into a chewy brownie with gooey melted marshmallow, topped with hot fudge & chopped nuts. Can you taste it? Oh yum.

KT0C8426wNow I need a little favor from you . . . pretty please. I have a sweet daughter named Danielle. She is married to one sweet guy named Brian. They attended one sweet Dental school in Richmond, Virginia for years & years & years & years & years & years. We now have someone who can drill, pull & implant teeth in our family. S-w-e-e-t! The HONE family is trying to buy their first home from Castlerock Builders.

KT0C8389w  Katharine Hepburn Brownies are also sweet . . and they are also my very favorite brownie recipe. Click here for the recipe.  You can whip these up in minutes flat! Make sure to melt the chocolate & the butter over the lowest heat possible.

KT0C8391wYou don’t even need to pull out your mixer . . . just a whisk.

KT0C8394wUse a gentle hand when making brownies . . . don’t beat, just combine gently.

KT0C8396wWhisk the eggs into the chocolate sugar mixture . . . just until combined.  Don’t beat like a crazy person!!!!

KT0C8400wFold in the flour with a spatula until combined.KT0C8401wTry not to eat it all.  It’s really yummy!  See that waffle iron in the background?  Oh . . . the wonderful creation I made.  That’s for the next post.

KT0C8408wI pulled out this little mini pie tin for this post.  Fill it half full with brownie batter & bake.  350 degrees for about 15 – 16 minutes.

KT0C8410wTop with mini marshmallows, and place back into the oven, just until the marshmallows are lightly golden brown. Let cool for just a minute or two.

KT0C8412wRemove from the pan, and let the brownies cool on a wire rack.

KT0C8424wDrizzle, drizzle some Hot Fudge sauce over the top of the marshmallows. Sprinkle some chopped nuts over the warm chocolate . . .but . . . only if you like nuts.

Life sometimes is a rocky road, but a good friend & a good brownie makes the path easier.

    These look luscious!!!! I don’t have a mini pie tin…any substitute recommendations? Good luck to your daughter with contest! Thanks for sharing!ReplyCancel

      Hi Mary,

      You can do the same thing using a 9×13 pan of brownies, and then cutting them.
      Make sure that you line your baking dish with foil, then you can simply lift out the entire slab of brownies.

      A whoopee cookie tin also works well, or even a mini cupcake tin would work, or a standard cupcake, as long as you don’t fill it full. I would fill a standard cupcake -half full with batter, then bake.
