BROWN SUGAR FUDGE
- 2 cups packed light brown sugar
- 1 cup granulated sugar
- 1 cup heavy cream
- 1 tablespoons light corn syrup
- 1/4 teaspoon fine sea salt
- 2 tablespoons unsalted butter
- 1 teaspoon pure vanilla extract
- 1/2 cup pecan pieces (optional)
- special equipment: candy thermometer
Directions:
Butter an 8 by 8 by 2 inch baking pan.
In a medium saucepan, combine the brown sugar, granulated sugar, heavy cream, corn syrup, and salt and heat over medium heat, stirring to dissolve the sugar. Insert a candy thermometer and cook, stirring occasionally, until the mixture reaches 238 degrees F.
Add the butter and stir until melted and fully incorporated, then remove the pan from the heat and let the mixture stand, WITHOUT stirring, until it cools to lukewarm ( about 120 degrees F)
Add the vanilla to the fudge and beat with a wooden spoon until smooth and creamy. If desired, fold in the nuts. Pour the fudge into the prepared pan and let cool to room temperature.
Once the fudge has set, cut it into squares. Store in an airtight container at room temperature for up to 2 weeks.

The Fruition would be perfect as a snack at school! (The fudge probably would be, too, but I bet the Fruition would be a tad bit healthier.)
What a fun giveaway and recipe, Jonna!
I would love to try out the original Pro Bars. We’re always on the lookout for a healthy snack bar that my husband will eat – something deliciously fruity and not too sweet.
I love your blog and frequently come browse for recipes. Right now I’m on the lookout for “cool summer meals” because when it’s hot I don’t feel like heating up the house by cooking a warm dinner. Any ideas? Also – we have a new baby, so quick, easy dinner ideas are always welcome, too!
The Halo. Although the fruition look yummy too, especially the lemon…
I think the original one sounds yummy. I would like to see anything pumpkin since fall is right around the corner!

Hi! I would love it if you would post a recipe for crab cakes or deep fried scallops. There is a restaurant in Harbour Town on Hilton Head Island called The Crazy Crab that makes both. They are so absolutely mouth watering, melt in your mouth delicious. I have tried many recipe’s with many modifications and just can’t seem to get them right! (Close, my family says, but not “right”). BTW, I made one of your favorites (bacon, chicken, ham pasta dish) my family finished an entire pot in two days and requested it again 3 days later! Love it!!
Fruition is always good!
Halo bars are my choice. I would appreciate any good side dish recipes but I love everything you post. Thanks!

Hi Jonna,
This is Jill from Evanston.
Just wanted to say that my daughters and I love love your blog!
I have a son serving in Africa and we have sent him a few of those pro bars. He has loved them. He doesn’t get much protein there, so we send a few every so often. He has liked all of them. I myself haven’t tried them, I guess I will have to.
thanks for all your great recipes! I really love your main dishes!
Have a great day!
Jill Welling Smith
Hi Jill,

Jonna
Oh this is a tough one. Seeing that I have to choose. . .I would def love the Halo Bars. (Seriously, the packaging alone makes me want to try them!) Since we are heading into the fall I would love to get a head start on planning Thanksgiving. I just heart sweet potatoes! Could you possible post a recipe that’s a little bit out of the box. Well, at least a step up from my sweet potatoes with marshmallows. 🙂 Thanks so much!
I would like to try the fruition bars. They sound delish! I would like to see you post side dishes or salads. I love the sweets and I save so many but I can’t make them very often because I would end up eating it all, so I just drool over the recipes!
I would love to try the Halo. I’ve tried the others but I’ve never seen the halo!
I’d like to see more main dishes. Although I do love your desserts…
It looks like my comment didn’t get entered? I would love to try the halo. I’ve tried the others but not seen the halo.

Ohh these sound good. I would love to try the Halo,, or the Original,.. no the Halo. I enjoy all your recipes, whether it is sweet or savory. And I also have been busy, busy, canning. Hate to see it all go but glad it’s almost over.

I would like to try the Halo bars -mmmmm. As for what recipes I would like to see more of – Thanksgiving is fast approaching, so I would like to see “special” pies. You know – not the standard apple/pumpkin etc. Something that will knock everyone’s socks off. :)Ironically it was me asking my cousin Niki for dessert recipes for Thanksgiving that landed me on your blog in the first place. lol 🙂
Hmmm. My comment didn’t come up the first time. Let’s try again. Would love to see more desserts, have a sweet tooth, what can I say?!!! 🙂 As for the pro-bars, would love to try the Halo selections. Cheers!

Dang, I was hoping you were giving away a copy of that fabulous-looking cookbook! The bars sound interesting, though, so I’ll throw my name into the hat. What have I got to lose, right?
As for recipes, I’d love to see more main dishes, since I really need to lay off the sweets. You make that VERY hard to do, by the way!
Thanks for the giveaway and the recipes. I always love stopping by your blog to see what’s new. Maija-liisa pointed me your way a year or so ago and I’ve been enjoying your site ever since!
I would love chocolate orange bars!!! And more desert recipes!

Please make something Halloween!! So..more desserts!!
BTW I tried your recipe for Honey BBQ chicken kabobs and they were AWESOME! Thanks!
The original box and more dessert recipes please
Those Halo bars look delicious! I would love to win any of them that don’t have peanuts or apple products. Those are lethal allergies around here. (weird, I know). So many companies have started using apple juice as a sweetener and then we can’t eat them! Give me good ole’ sugar any day.
I love your main dishes because I’m always looking for new dinner ideas. Our fav recipe of yours is your teriyaki chicken bowls. Yum! Thanks for sharing your talents with the world! 🙂
Thank you for the awesome giveaway! I think I’d enjoy the Original collection. Honestly, I am thrilled with all the recipes you post. Dessert or Main Dish. Just keep doing what you’re doing.
miyax15 at yahoo dot com
Fruition sounds delish!!! Thank you…so kind of you
Jonna, I love that you share your time and recipes with us. I’m curious were you found the recipe book.
Hi Nancy,
I found the book at Barnes & Noble. It’s a great one!
Jonna
I followed the recipe to a T and got very sugary fudge–as in sugary/grainy. Any suggestions? It still tasted okay, but the texture was not smooth at all.
Hi Jennifer,
Gosh….that has happened to me before when making fudge.
Make sure that if you try it again, you do not touch or stir the mixture until it’s cooled as the recipe directions state.
Also, don’t scrape the sides of your pan.
If I see sugar crystals forming on the sides of my pan, I take a pastry brush and very hot water and melt the sugar away.
Also, make sure that you are using a good HEAVY large pot….I love the cast iron Porcelain Martha Stewart pots….they are well work the money.
Macy’s always has great sales on them. They will last forever!!!
Good luck,
Jonna
