ONION RING LOAF…similar to Tony Roma’s

You probably won’t believe me, but I’d drive to SLC, UT….just to get these Onion Rings. I really don’t care for chunky onion rings, but these are super thin, and fried really crispy. I’ve made these several times now, and they are almost exactly like Tony Roma’s. Make sure that you buy sweet onions, and slice them very thin. Fry them up super crispy!

You will need:

 3 to 4 lg. Vadalia sweet onions, sliced very thin
1 cup Milk
3 Eggs, beaten
Salt to taste
2 cups Pancake mix
*I use bisquick

DIRECTIONS:

Slice the onions crosswise (quite thin) and separate into rings. Combine milk, eggs, and salt to taste in mixing bowl. Soak the onions in the mixture about 30 minutes. Place pancake mix in a shallow bowl. Heat oil for frying in skillet to 375 degrees. Remove the onion rings from milk mixture, dip in pancake mix and place in hot oil. Fry rings until golden brown and drain on paper towels. Pack fried onion rings solidly, but loosely, without pressing, into an 8×4″ loaf pan. Bake at 400 degrees 10 to 15 minutes. Turn onto serving plate.
