Oatmeal Chocolate Chunk Cookies

If I want to make a cookie that seems to make everyone happy, it’s this one. This soft oatmeal cookie is adaptable to many tastes. It’s also lower in fat. That’s a good thing!

Why you ask?

The addition of Applesauce or mashed banana or a combination of the two is the secret.  Lately, I have been using half Applesauce and also using the 2 or 3 bananas that are screaming to be used. The two of these together, makes one remarkable cookie.  You can also use just Applesauce or just mashed bananas in it’s place. Both are very good.

This cookie, is our family favorite for so many reasons. You can add a variety of throw-in’s that will please just about everyone.

For my husband, I add your typical raisin and also golden raisins. He is crazy for lots of walnuts as well.

For myself, I add dried Cherries, nuts and semi-sweet chocolate chunks.

My children don’t care for walnuts, so the addition of chopped Almonds and Milk Chocolate chips, flaked coconut is also fantastic.

These cookies are perfect in a lunch-box and they travel well. They stay soft for days . . . if they last long enough. I like to make a double batch and bake a couple dozen cookies at a time. Just refrigerate or even freeze the remaining dough until you need to bake more.

Oatmeal Chocolate Chunk Cookies

Add in: chopped dates, raisins, dried cherries, coconut, Chocolate Chips, any chopped nuts, dried blueberries, etc. Double the recipe and freeze half of the dough for later!

Ingredients

  • 1 cup Applesauce or mashed bananas. (I like to use 1/2 cup Applesauce and 2 mashed bananas)
  • * make sure that it equals 1 full cup*
  • 1 cup sugar
  • 1/2 cup butter or shortening at room temperature
  • 1 egg
  • 2 cups flour
  • 1/2 tsp. salt
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. cloves
  • 3 cups Oatmeal (Old fashioned is best but quick also works)
  • 1 cup chopped nuts
  • 1 cup raisins or dried cherries or chopped dates
  • 1 cup chocolate chips or chunks
  • flaked coconut is also a great addition

Instructions

  1. Combine flour, salt, soda, baking powder, cinnamon and cloves in medium bowl and set mixture aside.
  2. Cream room temperature butter and sugar until light & fluffy.
  3. Add egg and beat again.
  4. Add Applesauce or mashed banana or the combination of the two. Beat again.
  5. Add the flour mixture until well blended.
  6. Stir in Oatmeal, raisins, nuts and chocolate chips. etc.
  7. Drop by spoonfuls or use a ice cream scoop and place balls of dough on cookie sheet.
  8. Bake at 375 degrees for 10 to 12 minutes.
  9. Let cool on wire racks. Place cooled cookies in well sealed containers.
  10. These cookies also freeze very well.

      Hi Natasha,

      They are so good!
      Use room temperature butter or you can even use margarine or shortening as well. Both work very well.
      A single recipe will yield at least 3 to 4 dozen cookies depending on the size of your cookie scoop.
