This is a recipe that my Grandma made often, and we all loved it. I finally found the recipe at the bottom of an old recipe file. I found a lot of lost treasures in that file, that I will post soon. This is a large recipe, but you can cut it in half. SO GOOD!
MOZZARELLA, PARMESAN POTATO WEDGES
YOU WILL NEED:
8 to 10 potatoes, peeled and cut length wise in wedges about 1 inch thick.
2 cups half and half cream
2 teaspoons salt
2 cups grated mozzarella cheese
1/2 cup grated Parmesan cheese (fresh is best)
2 tablespoons finely chopped fresh parsley
1/2 cup crumbled crispy bacon
DIRECTIONS:
Place potatoes in a greased 9×13 inch pan. Pour half and half cream over potatoes to coat. Sprinkle with salt. Bake at 350 degrees for about 45 minutes or until potatoes are tender. Remove from oven. Sprinkle mozzarella cheese over top. Bake for 15 minutes more. Remove from oven and sprinkle with Parmesan cheese, parsley & bacon.
