MEXICAN CHICKEN CASSEROLE # 2

This is a great Mexican chicken casserole recipe with chicken, taco sauce, and seasonings, along with taco chips and cheese. You could also use ground beef, instead of the Chicken. It’s really good served with a crisp green salad, or you can also serve this casserole with a bed of shredded lettuce & chopped tomatoes as well. It’s simple to put together, when you are very short on time. Use Rotisserie chicken is you are in a pinch for time!

Ingredients:

4 boneless, skinless chicken breasts, cooked & shredded or cubed or
1 lb. ground beef
1 can (10 3/4 oz.) Condensed Cream of Chicken Soup
1 can (10 3/4 oz.) Condensed Cheddar Cheese Soup
1 can diced tomatoes and green Chile’s
1 – bag tortilla chips, crushed
2 cups Shredded Cheddar cheese

BROWN beef in skillet. Pour off fat. Combine chicken or beef, soups, tomatoes and tortilla chips in microwave-safe casserole. MICROWAVE for 10 minutes, or Bake for 20 minutes until hot & bubbly. Top with grated cheese, and put back into the oven, until cheese has melted. Top with crushed Doritos or Frito Chips.
