Ingredients

1 cup granulated sugar
1/2 cup butter
2 eggs
6 tablespoons buttermilk
2 very ripe bananas, mashed
1/4 teaspoon salt
1 teaspoon baking soda
1 1/2 cups all-purpose flour
1 cup chopped walnuts or pecans (opt)
Instructions
Preheat oven to 350 degrees. If oven runs hot, heat to 325.
Beat sugar and room temperature butter together until light & fluffy.
Beat in eggs one at a time. Add 6 tablespoons buttermilk and mashed banana and mix just until blended.
Add salt, soda and flour and blend again. Don’t over-blend.
Stir in chopped nuts if desired.
Batter will be thick.
Pour into a greased 9 inch loaf pan and bake 50 minutes. Check for doneness with a toothpick. If toothpick inserted into center comes out clean, the bread is done.
Cool 10 minutes in pan and remove the bread and place on a cooling rack.
