ITALIAN PASTA FAGIOLI SOUP

This is a popular soup served in Italian Restaurants. This recipe tastes similar to the Olive Garden Fagioli Soup. You can also substitute shredded chicken for the ground beef, which is also very good.

YOU WILL NEED:
1 lb. ground beef, browned and drained
1 small onion, chopped
1 cup grated carrots
1 cup diced celery
1 (15 oz.) can diced tomatoes
1 (15 oz. can kidney beans, drained & rinsed
1 (15 oz.) can great Northern beans (undrained)
2 (15 oz.) cans beef broth
or
2 cans chicken broth
1 tsp. oregano
1/2 tsp. pepper
2 tsp. fresh parsley, chopped
1/2 tsp. hot sauce (Tabasco) (opt)
1 jar spaghetti sauce
1 small bag shell pasta or ditalini pasta
Place all ingredients in a large saucepan. Simmer until vegetables are tender. (30 to 45 minutes)
Serve with grated Parmesan or mozzarella on top. Great with garlic bread or bread sticks!
