IDLE ISLE TRUFFLES

I’ve been baking and candy making my fool head off in this house.  After a while, the body reacts to a sugar overload. It’s o.k……it really only happens just once a year, and after all it’s Christmas!  This is another yummy recipe for you to hurry and make this last week before the big day.  Idle Isle Truffles are really delicious, and will also look pretty on your holiday table. There is no cooking involved, other than melting some delicious chocolate to roll the balls in.  I also toasted the chopped almonds, which enhances the overall flavor of this candy.  It’s not too late to roll some sweet little confections of your own!
Idle Isle Truffles
1 can sweetened condensed milk
*Like Eagle Brand
1 lb. Powdered Sugar
*I used a bit more
1/2 lb. Butter, at room temperature
*Do not use Margarine
1 tsp Vanilla
Mix all ingredients together until smooth and well blended. I used enough extra powdered sugar that the mixture formed into a soft ball, but NOT STIFF.  Cover and Refrigerate mixture several hours until firm. Roll into small balls, then freeze overnight on cookie sheets.  Melt dipping chocolate, symphony bars or chocolate wafers and dip frozen balls in chocolate, then roll in desired nuts.  Keep covered in well sealed containers, in cool room or the fridge.
*Make your balls slightly smaller than the finished size you would like.  They grow as you dip and roll the balls in nuts!  Yummy and easy.
