Grilled Honey Barbecue Chicken Kabobs

Lazy is my middle name this week.
I’m FED UP with feeling crappy . . . soooooo  . . . no more!
I have a scrumptious and super easy recipe for you today.
It’s certainly one of our favorites for the grill.

Our meat of choice was Chicken today, but Beef chunks is also delicious.
Marinating the chicken or beef makes it very tender.
It really doesn’t get easier than this.
We are pretty darn plain jane in this family.
The original recipe calls for Peppers and onions, but we just don’t have those taste buds!
I add just pineapple and little bell mushrooms for my sweet half.
That’s it!
Just pour the marinade over the chicken chunks.
Add the mushrooms, peppers and onions if you choose.
Don’t put the pineapple chunks in the marinade…..just wait.
Cover with saran wrap and place in the fridge for at least 2 hours or even overnight.
Heat the grill when you’re ready.
Place the meat & veggies & fruit on the skewers.
Mine are metal . . . if you use wooden . . . make sure you have soaked them in water first.
They will BURN if you don’t!
I like low to medium low heat.
Once they are done to your liking, or just a tad before . . .
Baste with your favorite BBQ Sauce.
There is only one thing left to do.
EAT!

Grilled Honey Barbecue Chicken Kabobs

Ingredients

Scale
  • 1/4 cup vegetable oil
  • 1/3 cup honey
  • 1/3 cup soy sauce
  • 2 to 3 tablespoons fresh squeezed lime juice
  • 1/4 teaspoon black pepper
  • 2 tablespoons brown sugar
  • 1/2 tsp. Canadian Seasoning
  • 1/4 teaspoon garlic powder or 2 cloves garlic chopped finely and added marinade
  • 1/4 to 1/2 teaspoon red pepper flakes (opt)
  • 4 skinless, boneless chicken breasts – cut into 1 inch cubes
  • 1 small can pineapple chunks -(save the juice) (opt)
  • 2 small onions, cut into 2 inch pieces (opt)
  • 2 red bell peppers, cut into 2 inch pieces (opt)
  • small bell mushrooms (opt)
  • skewers
  • small cup of your favorite BBQ Sauce + 1 Tablespoon pineapple juice (I like Sweet Baby Rays)

Instructions

  1. In a large bowl, whisk together oil, honey, soy sauce, lime juice and pepper, brown sugar, Canadian Seasoning, garlic powder or minced garlic & red pepper flakes.
  2. Place the chicken, onions, peppers and mushrooms in the bowl, and marinate in the refrigerator at least 2 hours (the longer the better).
  3. Preheat the grill for low heat.
  4. Drain marinade from the chicken and vegetables, and discard marinade. Thread chicken and vegetables alternately onto the skewers. (If using wooden skewers-soak in water first)
  5. Lightly oil the grill grate. Place the skewers on the grill. Cook for 12 to 15 minutes, until chicken juices run clear. Turn and brush with your favorite BBQ Sauce
  6. Note: I mix BBQ sauce and and a couple tablespoons of pineapple juice together.

      Hi Anne,

      Canadian seasoning is a mixture of 5 spices, that works well for both steak & chicken. Sometimes the label will actually say
      Canadian Steak Seasoning. I like the TONE’S brand. I find it at Sam’s Club. If you can’t find it, substitute with your favorite
      chicken or steak seasoning blends. Thanks for leaving a sweet comment!

    Thanks for this great looking recipe I am going to try it this weekend. I came on to ask what is Canadian Seasoning too. Since I am from Canada you would think I should know, but I have never heard of it until I read your comment, then I realized that it probably is what we call Montreal Steak Spice Seasoning here.ReplyCancel

      Hi Tracy,

      At Sam’s club, the Canadian Seasoning and the Montreal Seasoning are two different spice blends.
      I have both, but much prefer the Canadian Seasoning blend. Hopefully you will be able to find it there.
      If not, use your favorite seasoning in the honey, soy sauce and oil combination.
