HARVEST HAMBURGER SOUP

We grew up on this soup! Serve it with hot rolls, and a green salad, and it’s a perfect meal.

YOU WILL NEED:
1 pound ground beef
1/2 onion, chopped (opt)
*I use onion powder or flakes
2 (10.5 ounce) cans beef consomme
2 cups water
1 1/2 cups chopped fresh tomatoes
or
1 (12-ounce ) can diced tomatoes
2 tablespoons sugar
1 1/2 cups fresh, frozen or (11-ounce) can corn
2 carrots, peeled and sliced
4 potatoes, peeled and diced
1 teaspoon taco seasoning
Salt & pepper to taste
1 to 1 1/2 cups grated mozzarella cheese
1/2 cup crispy bacon crumbled on top of soup
DIRECTIONS:
Brown ground beef and onion. In a large saucepan combine all ingredients except cheese. Cook uncovered until vegetables are tender. Add grated cheese & crisp bacon to individual servings. Makes 6 servings.
