In the summer, we don’t like to be stuck in the kitchen. Here are 2 recipes that I love, especially the chicken recipe. You can serve the pork or chicken as is, right out of the slow cooker, or shred & place on hard rolls, warm tortillas or over rice. It just doesn’t get any easier.
ORIENTAL BARBECUE PORK
2 -3 lbs lean pork roast
3/4 Cup soy sauce
1/2 Cup Chicken Broth or Water
3 heaping Tablespoons Brown sugar
1 Tablespoon sesame oil
2 cloves garlic, minced
Place all into a slow cooker, cover with lid and cook on low until falls apart easily, or until pork shreds easily (about 4-5 hours). Enjoy as is, or shred completely and serve on warmed flour tortillas or warm rolls.
EASY & DELICIOUS BARBECUE CHICKEN
6 chicken breasts-skinless and boneless
2 1/2 cups barbecue sauce (whatever your favorite is)
*you can use more if you like it really saucy
Place chicken breasts into the bottom of a slow cooker and pour barbecue sauce over them. Cover with lid and cook for 3 to 4 hours on med/high until cooked through and nearly falling apart. Enjoy as is, or shred the chicken well. Two forks does the job quickly-and serve on crusty buns or in a warm soft tortilla.
