This is a great dish, when you are short on time, and still want something that is really good. I seem to have a lot of macaroni noodles in this house, and this is the perfect way to use them up. Serve this with garlic bread and a green salad.
1 lb ground beef
1 cup chopped onion
1/2 tsp minced garlic
2 to 2 1/2 cups uncooked mini lasagna noodles
*I used macaroni noodles
1 26 oz jar spaghetti sauce
1 1/2 cups water
1 cup low fat cottage cheese (opt)
1 cup mozzarella cheese 1/4 cup grated Parmesan cheese
3/4 cup grated Cheddar cheese
In a 12 inch skillet, cook and stir ground beef, onion and garlic until beef is no longer pink. Stir in noodles, spaghetti sauce and water, then bring to a boil. Reduce heat to low, cover and cook 15-20 minutes, or until noodles are tender and liquid is absorbed. Meanwhile, gently stir in cottage cheese (optional) . Top with grated cheeses. Cover and simmer 5 minutes or until cheese is melted.
