This recipe is delicious, fast, fantastic & very rich. It calls for bow tie pasta, but you can use the pasta, that your family likes the best. I also add crispy bacon on the top!
EASY CHICKEN ALFREDO
YOU WILL NEED:
6 ounces dried bow tie pasta
2 tablespoons olive oil or butter
1/2 pound chicken tenders or boneless, skinless chicken breasts cut in strips
2 green onions, chopped
1 tablespoon butter
3/4 cup sliced fresh mushrooms (optional)
1 tablespoon fresh or 1 teaspoon dried thyme
1/2 tablespoon garlic powder or use garlic cloves instead
2 cups heavy cream
3/4 cup grated Parmesan or Romano cheese
1/2 teaspoon salt
1/2 teaspoon pepper
1/8 cup toasted pine nuts (optional)
Crispy bacon for the top (optional)
DIRECTIONS:
Cook the pasta according to package directions. Drain and set aside. In a large skillet heat olive oil or butter over medium heat. Add chicken and stir-fry about 5 minutes or until cooked through. In a separate pan saute green onions in 1 tablespoon butter until tender. Add mushrooms (if desired), thyme, and sauteed onions to chicken. (I use the same pan). Add garlic powder, cream, cheese, salt and pepper. Simmer about 30 minutes, stirring occasionally, until chicken is cooked and tender. Serve over pasta tossed with a little melted butter, or mix right in. Top with more Parmesan, pine nuts and bacon is desired.
