The other day, while sitting in the Doctors office, I was reading a magazine. I came across this recipe, & wrote in down quickly. The next day, I pulled out the recipe, and made these potatoes for dinner. They were so easy to throw together, since you use bottled Alfredo Sauce & grated cheese, and they were quite delicious. I thought I’d share the recipe. It came from Women’s circle. Next time I’m going to mix in pieces of smokey ham, and make it a main dish, that you could serve with a green salad & rolls.
EASY CHEESY SCALLOPED POTATOES
YOU WILL NEED:
2 lbs Yukon gold or baking potatoes
1 3/4 cups shredded cheddar cheese
1 jar (15 or 16 ounce) Alfredo Sauce
*I used Bertoli
1/3 cup chopped chives or scallions (opt)
1/2 cup milk
1/2 tsp. Onion Salt
Salt & Pepper to Taste
1/8 tsp. Cayenne pepper (opt)
DIRECTIONS:
1. Heat oven to 350 degrees. Coat shallow 2 quart baking dish with nonstick cooking spray.
2. Thinly slice potatoes. Reserve 1/2 cup cheese. Mix potatoes with remaining ingredients in large bowl. Spoon into prepared baking dish. Cover with foil; bake 1 hour.
3. Remove foil from baking dish; sprinkle with reserved cheese. Bake 20 minutes more or just until potatoes are tender and mixture is bubbly.
