You can also add mini chocolate chips, or drizzle melted chocolate over the tops to fancy them up a bit more. Trust me though, you really don’t need to do anything else, but follow the recipe. CORN FLAKE MACAROONS
4 egg whites
1 teaspoon good vanilla
1/4 teaspoon cream of tartar
1 1/3 cups sugar
1 cup chopped pecans or almonds
1 cup shredded or flake coconut
3 cups Corn Flakes cereal
1. Preheat oven to 325 degrees. In large mixing bowl, beat egg whites until nice and foamy. Stir in the vanilla and cream of tartar. Very gradually add the sugar, beating mixture until stiff and glossy. It will hold firm peaks when ready. Fold in the nuts, coconut and the corn flakes until mixed well. Drop mixture by rounded measuring tablespoons onto cookies sheets sprayed with pam, or use parchment paper instead.
2. Bake about 14 to 15 minutes or until lightly browned. Remove immediately from sheets. Cool on wire racks.
Variation: Fold in mini chocolate chips, crushed peppermint candy etc. YUM!
