CORN FLAKE MACAROONS

I am truly a glutten for punishment!  For the sake of this crazy blog, I decided I should make one of my very favorite cookies today.  After all, it’s a holiday…..right?  If you like macaroons, then you will love these delicate melt in your mouth Corn Flake Macaroons.  They will be perfect for your New Years Eve get-to-gethers.  They are fast and super easy to make.  Let your egg whites come to room temperature before you start mixing them, and you will be assured puffy beautiful cookies.
Mine, are loaded with sliced almonds, coconut and cornflakes, which make them chewy delicate delicious!  You can also add mini chocolate chips, or drizzle melted chocolate over the tops to fancy them up a bit more.  Trust me though, you really don’t need to do anything else, but follow the recipe.  A single recipe makes about 3 dozen cookies.  Enjoy!
Oh yes…..I’m getting a hankering for changing my template again…..help me! Do you prefer a dark or light background? I can’t move the furniture in my house very easily, so I must re-arrange my blog instead. Pray for me!

CORN FLAKE MACAROONS
4 egg whites
1 teaspoon good vanilla
1/4 teaspoon cream of tartar
1 1/3 cups sugar
1 cup chopped pecans or almonds
1 cup shredded or flake coconut
3 cups Corn Flakes cereal
Directions:
1. Preheat oven to 325 degrees.  In large mixing bowl, beat egg whites until nice and foamy.  Stir in the vanilla and cream of tartar.  Very gradually add the sugar, beating mixture until stiff and glossy.  It will hold firm peaks when ready.  Fold in the nuts, coconut and the corn flakes until mixed well.  Drop mixture by rounded measuring tablespoons onto cookies sheets sprayed with pam, or use parchment paper instead.
2. Bake about 14 to 15 minutes or until lightly browned.  Remove immediately from sheets.  Cool on wire racks.
Variation:  Fold in mini chocolate chips, crushed peppermint candy etc.  YUM!
