CORN CHIP CHILI CASSEROLE

If you’re in a hurry, and want something fast & easy for Dinner, then this is your recipe.

It only takes about 15 minutes to prep, and everyone loves it!

Crush Corn chips or even Dorritos over the top.

 

  CORN CHIP CASSEROLE

 You will need:

 2 cans of chili, with or without beans

*I like to use Chili without Beans and add one Can of Red Kidney Beans (drained & rinsed)

1 can corn drained…..or you can use 1 1/4 cups of frozen corn

1/2 lb. hamburger cooked & drained of any grease.
 Season the Beef with salt, pepper, onion powder and Taco Seasoning to your taste.
*optional:  I add about 3 Tablespoons of Salsa to the Ground Beef as well.
2 cups grated cheddar cheese or Mexican Cheddar
Fritos corn chips
Optional items: olives, chilies, diced tomatoes, shredded lettuce.

 *Directions:

 Mix chili, cooked and Seasoned hamburger & corn together in a large bowl. Add 1/2 cup grated cheese, and stir well. You can also add olives, green chilies & diced tomatoes to this mixture, if desired. Transfer this to a 9×13 inch glass dish. Top with the rest of the grated cheese & slightly crushed corn chips. Bake for 30 minutes at 350 degrees.

Serve on a bed of shredded lettuce & diced tomatoes if desired. I like to serve this with garlic bread, and a nice green salad instead. So Yummy & super easy!

*If I’m using this for Taco Salads, I omit the Corn Chips on the top before Baking.  That way, you can place this mixture on top of Lettuce in a Crispy Shell, add toppings like Cheese, Olives, Sunflower Seeds, Tomatoes, crushed corn chips, etc.
