Since my last post,
I’ve received a lot of buzzzzzz.
Some of it has been sweet . . . some of it has stung like a bee.
Here is what I do know:
This baking blog of mine, is nothing but a sweet hobby . . . nothing more, nothing less.
I don’t have sponsors, editors who check for misspelled words, photographers or kitchen assistants behind the scenes.
There are millions billions of smart, creative, amazing, mind blowing blogs just a mouse click away.
I’m humbled to think that with all there is to choose from . . .some of you still pull up a chair & visit me!
I thank you.

Let’s move on to sweeter more important things,
like these Chocolate Dipped Palmiers.
Before I forget again & again & again,
many of you have wanted a picture of my kitchen island.
Yes . . . it’s stained a different color than the rest of my cupboards.
I love it . . . It’s huge . . . It’s where I prepare everything.
It has a hickory top, but the rest of my counter tops are black granite.
Hopefully that answers the questions I’ve received . . . if not, leave me some more.
One of the perks of this baking blog is the Cookbooks that land on my front porch.
It’s like Christmas every week.
This Cookbook “BAKING” by James Peterson is on my top 10 list!
That is really saying something, considering I have hundreds of cookbooks.
Really I do.
It has step by step pictures on every single page!
It is seriously awesome.
If you can’t make something amazing, after following the instructions . . . you better step out of the kitchen.
When I saw the recipe for Puff Pastry, I thought . . . “Gee, If I wasn’t so lazy, I would make my own Puff Pastry!” Guess what? I knew that I had a box of puff pastry sitting on a shelf in the fridge. So I grabbed it. I took the easy way out, but I promise you . . . they are still ultra delicious. I’m really not lazy, I’m just busy.
Palmiers are crisp buttery cookies made out of puff pastry dough, that’s rolled into a rectangle using granulated sugar on the work surface instead of flour. They’ll keep for days but like most pastries are best eaten right away. It’s best to bake these in two batches, one sheet pan at a time.
Come on, grab your home-made puff pastry,
or
that box of puff pastry.
I’m not here to judge.
Roll puff pastry dough into about a 9 x 12 -inch rectangle about 1/4 inch thick.
If you’re using a box – Press the seams as flat as possible.
Use granulated sugar on the work surface and on top of the pastry.
Trim the edges if needed.
Fold over one side of the rectangle to form a 1 inch wide flap.
Repeat on the other side.
Sprinkle the folded sides of the rectangle generously with sugar.
Fold the two sides so they meet in the center.
Sprinkle again with sugar.
Roll gently over the rectangle to press the folds and keep them in place.
Don’t press too hard!
Fold one more time.
Press gently along the sides of the strip with your hand to even the strip if necessary.
Wrap the strip of pastry carefully in wax paper and chill for at least 30 minutes.
then . . .
Preheat your oven to 400 degrees and line 2 cookie sheets with a silpat or parchment paper.
After 30 minutes are up, pull the pastry from the fridge.
I like to use the bench scraper to cut 1/4 inch thick slices.
Like this.
Sprinkle with a bit more sugar.
If you like,
You can also sprinkle Cinnamon over the pastry as well.
Arrange half of the slices on the prepared sheet pan.
Leave at least 1 1/2 to 2 inches between the palmiers to allow them to expand.
Bake for about 15 to 18 minutes or until golden brown.
Like this.
Flip them over and make sure the underside has that beautiful caramel color as well.
If not . . . leave them flipped and bake a bit longer.
You can dive in and eat them . . . just as they are.
They are flaky and oh so delicious.
I decided to let them cool, melted some Symphony bars and pulled out a few sprinkles.
I also chopped a few pistachio nuts.
These are pretty for Valentines day,
but . . .
For the big Super Bowl game coming up,
you could dip the Palmiers in Candy melts using the Teams Colors, and sprinkles to match their uniforms.
I guarantee you they will snatched up in a hurry.

I’ve made quite a few things from your blog, and must say your pictures are what lure me in. These looks simple enough and I’m sure taste just as yummy. My superbowl go to is Italian Beef, passed down to me from my father. He loved cooking and I’m sure that’s been passed on to me. When he passed away he left behind over 600 cookbooks. I couldn’t bare to get rid of any of them, but I know how much he loved reading them, even if he didn’t cook from each and everyone. I to am also a big of a cookbook collector, can’t pass up a good book. I love your blog, very inspiring, but like I said the photos you post are the ticket! As for my favorite football party recipes would have to be Beer Dip and Knock You Naked Brownies! I found the Beer Dip on AllRecipes awhile ago and it has become a standard during football season. As for the brownies they are crazy good and addictive. They are super easy and I promise everyone will love them!

Do like I do with ALL “naysayers”. Simply tell them ALL this is why there are erasers on pencils and they most likely would not be standing behind that glass-door if it weren’t for “spell-check”. Not one of us are perfect…
Laugh and enjoy the little errors in life. It shows and reminds us we are human and not a bunch of machines. The know-it alls could simply move on to another page, no one forces them to keep reading and enjoying your delicious treats.

I don’t know the name of it, but my MIL always makes that dip with cheese and sausage and Rotel (i think?)… OMG, great for Super Bowl!! and so quick and easy too!!

Here’s a super easy, delicious recipe I make for sandwiches, which will be on my menu for the Superbowl this year. I’ve now started making them on homemade buns – which are actually amazingly simple- so I can make them smaller than normal so you can eat lots of other sides and delicious things without feeling enormously gross.

Bacon wrapped Dates
Pitted Dates
Bacon cut in half (each strip should be about 4″)
Wrap bacon around date and secure with a tooth pick. Lay them on a lined cookie sheet. Bake at 350 till bacon is cooked through. Let cool. If you decide to indulge before…I promise you will burn your mouth as the sugar from the dates is extremely HOT! These can be eaten warm or at room temperature.

On Superbowl Sunday I usually just put a beef roast (any cut) in the crockpot with lots of garlic and let it cook on low until it’s falling apart- about six to eight hours. I drain the fat, pull the meat apart with two forks, then add our favorite barbeque sauce and let it heat through. Easy pulled sandwiches.

My faboeite super bowl food would have to be my mom’s famous 7 layer dip. It’s to die for. I usually end up eating for a couple days.
I’ll be right over to visit & enjoy myself one of there!! You are absolutely amazing and talented and witty and have a zest for life and baking! You teach me daily to go for my dreams, do things I love doing even if its out of my comfort zone. It’s funny, these people actually have to idea how dang smart YOU are!! Here is a lady who is a master piano player, a licensed cosmitologist, a LOVER of English & grammar!! She’s not going to toot her own horn, because frankly she doesnt even see herself as great and brilliant and amazing…. she is humble. And honestly sometimes it infuriates me! Here is a woman who is a exercise guru because she can enjoy a good piece of chocolate and a decitant puff pastry. She is a size 2 yet still says she has saddle bags on her thighs and that if she doesnt run her 3 miles and do her pilates every morning that everything heads south in 3 days flat. She is a gifted writer and speaker. And you better believe that whatever calling she has in church, she’s going to go above and beyond her duties x100!!! No joke! She is the master of preparedness and promptness. She has impeccable cleaning skills, and a slight obsession with cleaning!
I could go on and on. And I will– but another day- another way!! Because, she’s amazing and real and the baker, wife, best grandma AND MOM. I try daily to live up to the standards she has taught me throughout life. This is a blog. It’s her 10 minutes of fame (although she really sees it as silly and a hobby– she has no idea people are raving about her!) For her it’s that little piece of me time. It’s the escape from the daily grind.
I posted on Instagram (www.instagram.com/chantrikeele) not too long ago (a horrible yet sweet picture of myself and my baby resting his head on my shoulder in the middle of the night) …. my thoughts were about our right to choose… Be happy or not to, stress or dont, follow someone on facebook, pinterest, instragram etc… ir not. its your choice if your going to Build someone up or tear someone down? And THATS on YOU! THAT’S WHEN YOU’LL BE JUDGED! so go ahead and pick out the silly things to critique people on, judge someone for their human-like mistakes. But really, it’s you that’s being judged, tested, held accountable. Choice is yours! Here’s the thing… Two of my favorite people to follow on Instagram are Instagram.com/whippycake and Instagram.com/kellehampton both unbelievably inspiring in their own ways. BOTH have been in the ringer this past week from FOLLOWERS! The hurtful rude things that people write is disgusting. It’s amazing people still choose to follow them when clearly they are so turned off by their actions. I comes down to the fact that they choose to be bullies, go against the rule that was taught to us all I’m sure at one point or another…. Remember this: If you can’t say anything nice, don’t say it at all?!! (Side note, that’s an incorrect way to use punctuation… I do know that! However my mom did have to help me all the way through school… Oh and since I’m on the subject, I won’t be spending time re-reading or spell checking or ya… None of that. It doesn’t really matter much to me that i appear to be perfect. Im not, no one is. I’m just being real!)

We make Bacon wrapped jalapeno poppers. My husband created this recipe while tinkering in the kitchen.
10 jalapeno peppers (try to get all the same size)
20 slices bacon (thin works best)
6 ounces cream cheese, softened
2 cups grated chesse (Mexican, pepper jack or whatever you have on hand)
Tasbasco to taste
Preheat oven to 375 degrees
Slice peppers in half, discard seeds and place right side up on baking sheet. Sprinkle with a little olive oil. Bake for about 15 minutes; remove from oven and leave on cookie sheet. Leave oven on.
Meanwhile, slice bacon strips in half length-wise. Partially cook on stove top then remove to paper towels. (Cook only partially as they will finish in the oven, and they need to be pliable to wrap around pepper.)
Combine softened cream cheese, grated cheese and tabasco.
Fill each pepper half with cream cheese mixture. Wrap a bacon strip around each pepper. Return to oven and bake till cheese is thoroughly melted and bacon crisps, approximately 15 minutes.
I don’t have a blog, but am sharing this and it would be great to make for Super Bowl Sunday. My husband had ordered these as an appetizer at a restaurant and then tinkered making them at home. Our guests always love them.
Keep in mind when preparing the jalapena peppers is that you might want to wear gloves. My husband has no problem with the capsacin from the peppers, but the first time I helped him make this recipe, I did not wear gloves while preparing the peppers and my hands BURNED for several hours after. So now I wear gloves.

Holy moly, these look so delicious! I can’t even describe the look on my roommates faces when I show them all of the treats on your blog – they are equally drooling with delight and terrified of eating their body weight in food.
I’m so excited that part of this giveaway is to post Super Bowl snack recipes because football food is my FAVORITE! And now I also get to look at all of the comments and try some of them out 🙂 My go to snack would have to be buffalo chicken dip. It’s incredibly easy and makes a ton so you can either feed a crowd or eat the whole thing as your lunch/dinner meal (whatever time your team is playing!). Okay here it is:
Ingredients:
1 cup Frank’s Buffalo sauce
1 cup ranch dressing (can also use blue cheese if you prefer)
1 8 oz. package of cream cheese
1 8 oz. package (2 cups) of shredded cheese (cheddar cheese is usually used for buffalo chicken, but I like to use the four cheese mexican variety to mix it up)
3 medium-sized cooked chicken breasts, finely shredded
Preheat the oven to 350 degrees. Mix together buffalo sauce and ranch dressing. In a separate bowl, beat cream cheese until light and fluffy. Add buffalo-ranch mixture, and beat until well combined. Add 1 cup of the shredded cheese to the mixture and mix until the cheese is distributed throughout. Add the chicken and mix well. (I don’t know about you, but I like lots of chicken, so the dip ends up looking more like a thick spread than a soupy dip. So much so that I have to spread it in the pan with a rubber scraper. Trust me its perfect this way.) Spread the dip in a 9×13 glass baking dish and top with remaining cup of cheese. Bake for 30-45 minutes, until the cheese is completely melted on top. Serve with Frito’s Scoops, or whatever dipping chip you like. But I really suggest the Scoops. They rock.

I’ve done all of the things you asked for–except now, I don’t have a favorite recipe for the Superbowl because my husband HATES sports! Ha, I am a lucky woman. I do like to watch a bit on TV–I asked my daughter if she wanted to watch the superbowl with me this year and she said yes–yea! We will probably have something simple–like carrots and celery and ranch dip or homemade pizza to watch the game,….my husband will be working so it will just be the two of us–Thanks for all you do, and for teaching us to Get off your butt and bake!

My favorite recipe for Superbowl is Pulled Pork in the crock pot, I rub it with cumin, garlic, brown sugar and chili powder, pour a can of coke and a small bottle of bbq sauce and let it cook all day!Pull it apart and serve with your favorite sauce!

one of our favorite superbowl dishes is Creamy Taco’s. Def. not heathly or gormet but my husband loves it!
Creamy Taco’s
ingredients
1 1/2 lb ground beef
1 onion chopped
1 green bell pepper chopped
1 can Rotel
1 Brick of Chili
1 lb Velveta Chopped
1 Cup Whipping Cream
1Brown ground beef, drain. Add onion and peppers, tomatoes and chili and cook. stir in rest of ingredients.
2Serve over chips with cheese, chopped tomotoes, olives, etc
What do I love about your website? Everything! From your stories to your recipes and everything in between. I can’t wait until you post something. I don’t know you, have never met you and probably will never meet you, but I simply have to tell you how much I enjoy your blog. Your pictures are fabulous, even the ones you don’t like. I love them. Don’t take those negative comments to heart. Those people are obviously unhappy with something in their own life and they are taking it out on you. They are bullies. They obviously have low self esteem, they are jealous and they are trying to bring you down so they can feel good about themselves. Don’t let them. I forgot to give you my favorite Super Bowl recipe. Oops.
Melt a small block of Velveta. Add Rotel (drained), sliced green onions, rinsed/dried/diced dried beef, diced Jalapeno and, a dollop of sour cream. I serve this from a mini crock pot with tortilla chips. Yum!

My favorite dip at the moment is Jalepeno Corn Dip. Quick and easy with ingredients that I almost always have on hand.
1/2 c sour cream
1/2 c maynnaise
1/2 c salsa
1/2 t garlic powder
1/4 t pepper
2 jalepeno’s seeded and chopped
2 c shredded sharp cheddar cheese
1 (14 oz) can sweet corn, drained
Mix everything together and refridgerate to let flavors combine. Serve with tortilla chips.
Don’t let snarky comments get you down! Who cares if the photos aren’t perfect – although I’ve always thought they were great! And who cares if you misspell a word every now and again – you are putting a lot of wonderful info up there for us all! And if someone wants to eat more healthy then go to another blog – or if they can’t control themselves – why is that everyone’s else’s problem?? It always amazes me that people feel the need to belittle someone! You are doing a wonderful job of sharing recipes and you share your own special way and a little of yourself – I’m so glad you do!! While I will be at work for the big game this year my go to football party recipe is a simple taco dip. Layer refried beans with sour cream + taco seasoning and then top with cheese, diced tomatoes and sliced olives. Yum.

I’d love a chance at that cookbook – I love to bake most of all, but I had to sell or give away all my beloved books when we moved into our camper. Now we’re back in a house, and I’ve got an empty drawer in my kitchen that needs a good cookbook!
My favorite recipe for ball games? mmmm…well, it’s probably no-flour peanut butter balls.. 1 Cup peanut butter (creamy or crunchy, no matter), 1 cup sugar, 1 tsp baking soda, vanilla, 1 egg. Mix ’em all together & roll into walnut-size balls, then roll in sugar. Flatten if ya want, criss-cross with a fork if ya want..decorate if you want (sometimes I flatten & add 3 peanut halves) or just leave ’em be. Bake at 350* for about 8 minutes. I dare you to eat just one!

I’m not usually a fan of the palmiers but the ones dipped in chocolate with pistachio chunks looked so good I might just have to try them again!
My family doesn’t really watch the Super Bowl but a good snacky food that doesn’t last long around the house is Chex Mix with extra nuts.
Was sitting here going through pininterest looking for a recipe for beef stew. Wanted something different but not to different because hubby is sooooo picky. Found yours and decided what the heck its a little different from mine lets give it a try. So it in the slow cooker now and I cameback to search your website and OMG.
