CHICKEN CORDON BLUE with ALFREDO SAUCE

This is one of my very favorites! The Alfredo sauce is delicious. Fattening but Oh so Good.

YOU WILL NEED:

  4 skinless boneless chicken breast
 4 slices ham
4 slices jack cheese
 4 basil sprigs (opt)
1 cup heavy cream
as needed salt and pepper
2 cups Italian bread crumbs (Panko works great)
 2 eggs beaten
 2 cups flour
 2 tsp minced garlic
 1 pound sweet butter
1 cup shredded Parmesan cheese

DIRECTIONS:

For chicken, season breast on both sides with salt and pepper and than cover with plastic wrap and pound with dull side of mallet. Onto pounded chicken, place a slice of ham, basil leaf, and sliced cheese, then roll. Roll the chicken in flour, egg and then finally bread crumbs coating well. Heat oil in a large sauce pot and when hot, brown chicken. Deep fry until golden brown then remove and bake in oven at 350 degrees for 20 minutes. You can also brown chicken in a hot skillet with cooking oil. Brown well on all sides. When chicken is done, slice thinly and serve with Alfredo Sauce.
