Here is another yummy Chicken dish. These are popular in Mexican restaurants, but you can also make them easily at home. Enjoy!
Chimichangas made with Chicken, Salsa, Mozzarella & Cheddar
2 or 3 chicken breasts cut into strips
2 tablespoons chopped red onion or other variety
2 tbsp oil
1 medium tomatoe, chopped fine
1 cup grated mozzarella or cheddar cheese
1 can black beans or Kidney beans, drained and rinsed
4-5 tbsp salsa plus extra for serving
8 flour tortillas
oil for frying
Fry onion and chicken in oil until chicken is cooked. Add finely chopped tomatoes, beans and salsa and heat thoroughly. Remove from heat and stir in the cheese. Divide mixture between tortillas, placing some in centre of each, and bringing up opposite sides to fold over filling and result in a square shaped parcel. Secure with toothpicks if needed. Shallow fry, turning each chimichanga once, until golden brown. Serve with salsa, guacamole, sourcream, olives, lettuce, more cheese, etc.
