My favorite desserts are the messiest. Example – This Dream Cookie Pie.
This is the pie you probably should only dream about. Caramel, chocolate, walnuts… everything delicious combined into one even more delicious pie. The messier the pie, the yummier it tastes. Give everyone at the table a spoon and tell them to dive in, cuz it’s Best eaten out of the pan, warm, with vanilla ice-cream, if you dare. This recipe is very similar to that cookie dessert you get at Craigo’s pizzeria or in some of your fancier restaurants. Throw caution to the wind, and enjoy!
My Dream Cookie Pie
For the cookie crust:
½ c butter
½ c chocolate chips
¾ c brown sugar
½ tsp vanilla
1 large egg
1 ¼ c all-purpose flour
½ tsp salt
½ tsp baking soda
Preheat oven to 350 degrees. Lightly grease a 9×9 inch cake pan or you can use a large pie pan as well. (you’ll be eating it out of the pan, anyway). Cream together the butter and sugar until fluffy. Beat in the vanilla extract and egg. Sift together flour, baking soda, and salt in a separate bowl. Gradually beat the flour mixture into the sugar mixture. Reserve 1/3 c cookie dough for topping. Press the remaining cookie dough into the cake pan and bake for 8-10 minutes, until the top looks dry. Leave the oven on after you take out the cookie crust.
For the pie topping:
1/3 c reserved cookie dough
2/3 c caramel ice-cream topping
4 Tbsp all-purpose flour
1 tsp vanilla
½ c chocolate chips
½ c chopped walnuts or nut of your choice
Hot fudge or chocolate syrup for drizzling
Mix together the caramel ice-cream topping, vanilla, and flour until smooth. Sprinkle walnuts and chocolate chips over the cookie crust. Spread caramel topping over the walnuts and chocolate chips. Crumble reserved cookie dough over the caramel. Bake for 20 minutes, or until the pie is really golden brown.
Let cool for 5 -10 minutes and then drizzle generously with hot fudge. Serve with several scoops of vanilla ice cream. Grab a fork or spoon and EAT! Be careful not to burn your tongue!
