Do you need a fast & super easy meal for Super Bowl Sunday?
This spicy Mexican dish just might fit the bill.
It’s pretty tough to take a pretty picture of a casserole, but I promise . . . it’s pretty tasty!
This was voted the #1 Casserole for the year at Taste Of Home.
It’s fast to throw together, and we even crunched Doritos on the top.
The next time I make this, I’m going to add some Spicy Sausage as well.
Now . . . if you have a Meat & Potatoes kind of husband like I do, this won’t be his favorite dish, but he won’t turn up his nose. My sweet husband will eat anything placed before him, and he ate 2 helpings and said: “Well . . . it was good, but not as good as a roast would have been!” My response: “Whatever!” So, make Enchilada Casserole for Super Bowl Sunday, serve it with Toasted Garlic Bread, and maybe a tossed green salad. Make sure you have some Corn Chips or Doritos to crunch over the top! I used flour tortillas, but I do believe corn would also work just as well.

Cheesy Enchilada Casserole
Ingredients
- 1 pound lean ground beef ( lean)
- 1 large onion, chopped or season with Onion powder or minced onion
- 2 1/2 cups salsa
- 1 can (15 ounces) black beans or red kidney beans, rinsed and drained
- 1/4 cup reduced-fat Italian salad dressing
- 2 tablespoons reduced-sodium taco seasoning
- 1/4 teaspoon ground cumin
- 6 flour or corn tortillas (8 inches)
- 1 small can of drained corn, or about 1 1/4 cups of frozen corn (optional)
- 3/4 cup sour cream *Note: I used 1/2 cup
- 2 cups shredded Mexican cheese blend or your favorite cheese
- 1 cup shredded lettuce
- 1 medium tomato, chopped
- 1/4 cup minced fresh cilantro
Instructions
- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
- Stir in the salsa, beans, corn, dressing, sour cream, taco seasoning and cumin.
- Spoon a generous layer of meat mixture on bottom of 2 quart baking dish. Sprinkle with grated cheese.
- Place a flour or corn tortilla on top of meat mixture. Layer with half of the meat mixture, and cheese. Repeat as many layers as you like.
- The last & final layer should be a healthy dose of grated cheese.
- Cover with foil that has been sprayed with pam or other and bake at 400° for 25 minutes, or until hot & bubbly.
- Let stand for 5 minutes before topping with lettuce, tomato and cilantro. Yield: 8 servings.
Notes
*Note: I added 1/4 cup of fresh chopped cilantro to the meat mixture instead. I also cut the flour tortillas to fit my pan, since they were the very large size. (That’s why they are square) I fried the cut-off edges and sprinkled them with cinnamon & sugar!

I want to make this for a friend who just got out of the hospital. Should I bake it first and just have them reheat it or should I bring it over not cooked and give them baking instructions? If I don’t cook it first, I feel like the tortillas might get soggy. What do you think? I want to bring this over to them on Wednesday. Help! And thank you for such a great recipe. I can’t wait to try it!

If you know that they will be eating the dish shortly after you take it over to them, I would go ahead and bake it.
Let them bake it, if you are dropping by early in the day, instead of dinner time. As long as they bake it the day you take it over
to them, it will still be yummy. They could also put it in the freezer for another time, if you take it unbaked.

honestly, I glanced at the long list of ingredients and was intimated enough to decide this recipe isnt worth it. I am on a strict budget and have about 1 square foot of counter space in the kitchen, literally. Is there a simpler version of this recipe?

You could simplify this recipe, by leaving out the cumin, italian dressing and possibly the cilantro.
The salsa and taco seasoning would probably give it enough of a kick.
It really is easy to throw together though, and possibly worth the hassle!

Ran home at lunch time and made 2 of these casseroles. Started with 2 pans, side by side and 1 lb of ground TURKEY in each pan. I managed to make 2 casseroles in a matter of 20 minutes, one for tonight and one for the freezer. Super easy and I could tell just by tasting the meat filling that this is a definite keeper!!! Thanks!!

Hello! I found your recipe last week and decided to try it today for our couples crew! It was a hit…Everyone loved it. I wanted to know if there was anyway to prevent the tortillas from getting too soft. I baked mine longer than suggested because it was looking like it had alot of liquid…But I was not sure if that made a difference. Let me know! Thanks! Great blog!!!

This recipe is awesome! My husband is a picky eater and he liked it and even took a second serving. Its definitely good with the lettuce and tomato on top when serving. I layered it with 2 layers of flour tortillas. My co-workers and our friends loved it, as I had so much left over that I packed it and gave it out.
I added “Tapatio” hot sauce, as it gave it a little kick. It was definitely better the second day, as the flavors developed. I think I may make it a day in advanced next time, and let it bake the following day because those flavors settle in really good!
PS I love this site! I’ve found a number of recipes that I can’t wait to try and a lot of this stuff I have in my kitchen already so it’s definitely a budget saver! Thanks so much and keep on blogging!

I made this tonight, I used ground turkey instead of hamburger, we don’t eat read meat. It was very very good. I also did the corn chip idea and salted them, if I had lime i would have splashed them with a little to add a bit more flavor. Thank you for this, I am pregnant and reading this recipe made me send my husband out for all the missing ingredients.

I just popped this in the oven. I’m so excited! Just wanted to make a note that 2 cups of shredded cheese is actually 8oz., not 4 oz. I was a little confused for a minute, but went with 2 cups!

Yummy and soooo easy to make! I used blk bean yellow corn salsa… Made it so chunky and filling! Love this! Even my picky toddler and snobby 6 yr old who only approves of french fries ate some!

The casserole is now in the oven. So anxious to try it but, I just discovered something. Not all of the meat mixture would fit so I’m standing at the stove eating it out of the pan and thinking what a wonderful soup! I had a lot of liquid in the pan so I strained some of it when I did the layering of the casserole. The flavor treat left in the skillet is wonderful. Would be so good with tortilla chips crumbled on top with cheese sprinkled on top. Love it and can’t wait for dinner. Very sure the casserole will be wonderful…..
This is now an every other week stale at our house! I make it with ground turkey and almost always skip the tomato/cilantro on top because the little ones dont care…. Also, its great to throw together in the afternoon and just toss in the oven ar dinner time! Someone above mentioned overwhelming grocery list…. But take note all ingredients are cheap and easy… P.s. The best salsa to use in this recipe, other than homemade, is herdez large jars so stock up when its on sale 🙂

Made this tonight for my parents. Left out the cilantro and couldn’t find cumin in my mom’s house, but it was AWESOME! The Italian dressing was great in it.
We’re going to use leftovers as a dip tomorrow night when some friends come over.

This is delicious! I’m a vegetarian so I used Morningstar veggie crumbles, plus two sliced bell peppers. I also omitted the salad dressing and only used about half the amount of salsa listed. Came out great! Can’t wait to eat leftovers all week 🙂 Thanks for the recipe!

Would ranch style beans be good with this instead of black/kidney beans?

As long as it is a bean that you have seen in mexican style cooking, then go for it!

Got the recipe from Pinterest. My 7 year old went back for seconds and my boyfriend went back for thirds! In addition to the lettuce, we topped with black olives too! SO good!

I found this recipe on pinterest. I had a whole chicken in the crock pot for regular enchladas. I just happened to have most of the ingredients on hand.. I used the shredded chicken, omitted the sour cream, onions and corn. I used corn tortillas and lined the bottom of the pan with them.. very good but I used almost 4C of cheese. Made in 9X13 pan… will make this again…
GREAT!!. Recipe only serves 5 at the most with no one having seconds. so I doubled it for my family of 5 since everyone wanted 2nds. However I tweaked it. No dressing and used half shredded cheese and half queso.
OMG!! I just whipped up the meat mixture to build the casserole later in the week and wow, I could eat just that!! FABULOUS!!!

This Enchilada casserole recipe is excellent! I had some friends over for dinner so I trippled the recipe and added both black & kidney beans. I also used Pace chunky salsa and it turned out amazing! There were no leftovers because my friends took the rest home! Thank you so much for this FANTASTIC recipe.

This recipe is really more like a Mexican lasagna. It makes much more than enough for a 2 qt casserole dish. Therefore, I filled 2, 2 qt casserole dishes. Baked one and froze one. The only differences to my recipe were as follows: ground venison instead of beef, 1 tbsp cilantro paste cooked in the meat/onion mixture, Kraft Mexican cheese with a touch of Philadelphia cream cheese,and used 1 cup of light sour cream. Delicious!
This was very easy and a big hit in my house! Will definitely make again. I think adding the Doritos on top made it great because it gave a little crunch to it.
I am on a budget also, made this for around 15 dollars. Skipped the garnishes…..not needed, tomatoes are 4 bucks each right now…..used chunky salsa, I got maters in it! Keeper! Will try with chick next……my husband turned up his nose as I opened black beans and corn…..but admitted they were terrific ingredients in this dish! Try it, no disappoint here.

I just did this recipe. It was SUPER delicious. I used corn tortillas and Tostitos medium salsa. I didnt use that much cheese, though. It was a hit.

I made this last night.This was by far the BEST enchilada casserole I have ever made and I have made plenty!The whole family raved over it. I cant wait to have leftovers for lunch today. This will be in our rotation of favorites replacing taco night every other week. Much easier and faster than tacos. We prefer corn tortillas, so that is what I used. I also added Chihuahua(quesadilla)cheese which in my opinion is a must for all baked Mexican dishes!Thanks so much for sharing!

When do you add the Dorritos? After baking? What type of salsa did you find to be the best? Lastly, if I don’t fry the edges of tortillas and sprinkle with cinnamon sugar nor add cilantro will that make a difference ?
