We have a Christmas Party to attend tonight, and I needed to bring something yummy. These cookies are one of our favorites. I like this recipe, because you can make two different cookies with one dough. They melt in your mouth! (I double this recipe)
YOU WILL NEED:
1 Cup butter
1 Cup powdered sugar
1 1/2 tsp. Vanilla
1 tsp. Almond Extract
1 3/4 Cup flour, sifted
1/4 tsp. salt
3/4 Cup nuts, chopped
(Use Pecans, Almond, Walnuts, etc.)
DIRECTIONS:
To make snowballs: Cream butter, sugar and vanilla until fluffy. Sift flour and salt together twice and blend in until the dough cleans the bowl. Stir in the nuts. Chill dough for at least 1/2 hour. Roll in 1-inch balls; place on ungreased cookie sheet. Bake at 375 degrees for 10 to 15 minutes, or until lightly browned. While still warm, roll in powdered sugar. Cool and roll in sugar again.
To make Chocolate Nut Logs: Shape dough into a long roll 3/4 inch wide; cut roll into 2-inch pieces. Place on cookie sheet. Flatten one end of each cookie lengthwise with fork. Sprinkle (forked ends) with granulated sugar. Bake about 10 minutes, or until light brown. Cool cookies on wire rack. Melt Chocolate chips in microwave oven or in top of double boiler over simmering water. Dip unflattened ends of cookies in chocolate, then roll in chopped nuts. Let cool, before placing on plate.
