One of my favorite suppers, is breakfast burritos, we had them for dinner last night, and they really tasted great. I only wish I had taken a picture for you. I’ve been away from blogging far too long. These taste delicious in the morning or in the evening. Here is a simple way to make breakfast burritos, without going for fast food.
BREAKFAST BURRITOS
YOU WILL NEED:
Soft Flour tortillas
1/2 to 1 lb. bacon, fried crisp and crumbled
or
diced ham
or
your favorite ground sausage
6 large eggs, scrambled
3 to 5 medium cooked potatoes, grated
(or use frozen hash browns)
Grated cheddar or other varieties of cheese
optional:
green & red peppers
olives
Salsa
Etc.
DIRECTIONS:
Fry hash browns in bacon drippings. After cooking each item separately, mix bacon, eggs, and potatoes in large bowl. Season to taste. Fill tortillas with mixture, or layer in separately, then add grated cheese. It’s also very good to lay your tortillas in a glass baking dish, cover with grated cheese and bake in a 350 degree oven until cheese has melted, & browned slightly around the edges, or place in microwave instead of oven.
