BEEF ENCHILADAS

Beef Enchiladas

Ingredients:

1 lb. Ground Beef
1/2 onion chopped (opt)
1 small can Ortega diced green chilies (opt)
1/2 cup of your favorite salsa
1/2 pkg. Taco Bell seasoning mix
1/2 c. Water
1 heaping teaspoon sugar
1 can (Mild) Old El Paso Enchilada Sauce, divided
1 small can tomatoe sauce
flour or 6-8 corn tortillas
oil
2 cups cheddar cheese, grated
1 cup mozzarella cheese

Brown ground beef with onion and green chilies. Add your salsa, taco seasoning mix, water, sugar and 1/4 cup of the enchilada sauce. In separate container, mix remaining enchilada sauce with the tomato sauce.

Fry flour or corn tortillas in a small amount of oil. Make sure that they are still soft enough to fold around hamburger mixture. Mix cheeses together. Roll the meat and some of the cheese in tortillas and place seam side down in 9×13 glass pan. Pour sauce over enchiladas and top with more cheese. Bake at 350 degrees for 20-25 minutes or until hot & bubbly.
