BANANA WALNUT CUPCAKES or BANANA BREAD

Today I was babysitting Addisyn, my little Granddaughter. We decided that we needed to bake something sweet. I happened to have four ripe bananas waiting to be used, and so we decided on Banana Bread with big chunks of walnuts for Grandpa. That would suit him just fine, but not Addi and I. We needed something sweeter. We made two loaves of Banana Bread, and used the rest of the batter and made these sweet little Banana Walnut Cupcakes. We took it one step further, and smothered the tops with Cream Cheese Frosting! That didn’t seem quite enough, so we sprinkled a few Brown Sugar Crystals over the frosting, and topped it with a fresh Raspberry! The recipe I used comes from Land O Lakes, and it’s very good! Addi and I think you should “Bake yourself some sweetness today!”

YOU WILL NEED:

3/4 cup sugar
 1/2 cup Butter, softened
 2 Eggs
 2 medium (1 cup) bananas, mashed
 1/2 teaspoon vanilla
 1 1/2 cups all-purpose flour
 1 cup chopped walnuts
 1/2 teaspoon baking soda
 1/2 teaspoon salt
 1/4 teaspoon ground cinnamon

Directions:

Heat oven to 350°F. Combine sugar, butter and eggs in large bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low; add banana and vanilla. Beat until well mixed. Stir in all remaining ingredients. Spoon batter into greased and floured 8×4-inch loaf pan. Bake for 60 to 70 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan. Place onto wire cooling rack. Cool completely. *Use no-stick cooking spray that contains flour to easily coat loaf pan.
