What do you do, when you have two ripe bananas?
. . . that’s not quite enough for banana bread.
a new favorite!
APPLESAUCE BANANA BREAD
1/2 Cup oil
*I used Canola
1 1/2 Cups sugar
4 tablespoons buttermilk
2 ripe bananas
1/3 cup applesauce
1 teaspoon vanilla
*you could use 4 bananas instead of the applesauce
2 cups flour
1 teaspoon Baking Soda
1 cup chopped walnuts or other nut
Cream the oil and sugar together. Next, mash the bananas and add to sugar and oil. Add the applesauce, buttermilk, vanilla and eggs to the sugar mixture, and mix well. Mix flour and soda together and add to sugar/banana mixture. Stirring just until combined. Add chopped nuts if desired. Mix again and combine.
Pour into 2 small loaf pans sprayed with pam. Bake at 375 degrees for 40-50 minutes or until done in center. I cover the top with foil after it is as brown as I like, then continue baking until center is completely done. This is serious good!
Today, I also made. . .
COCONUT DATE BARS
. . . oh baby, check back soon!
