These cookies are my favorite! I think they are well-worth the extra calories you will consume. You will want to double this recipe.
1 Cup Butter
1 Cup Powdered Sugar
1 tsp. Vanilla
1 tsp. Almond Extract
1 3/4 Cup flour, sifted
1/4 tsp. Salt
3/4 Cup nuts, chopped
(I use almonds or hazelnuts, but you can use any nut your heart desires)
Cream butter, sugar and vanilla & almond extract until fluffy. Sift flour and salt together twice, and blend in until the dough cleans the bowl. Stir in nuts. Chill dough for at least 1/2 hour. Roll in 1-inch balls; place on ungreased cookie sheet. Bake at 375 for 10-15 minutes or until lightly browned. While still warm, roll in powdered sugar. Cool and roll in sugar again. Eat until sick!
