4th of July Yumminess

Many of you will be celebrating the 4th of July . . . in big ways.

Red, White & Blue is all over the place!

My only contribution thus far, are these sweet little mini cupcakes that I made for the ladies that I . . . V.T.

Nothing special . . . but one or two bites of yummy!

The inside has Raspberry filling, and the frosting is Cream Cheese.

I just wanted to show you that you can make a delicious little treats, without spending all day in the kitchen.

I was able to make 72 little mini cupcakes with one single white cake recipe. (Use the smallest ice cream scoop for the perfect amount of batter in your tins)

You can even EAT ONE, without feeling too guilty! One recipe of the Cream Cheese Frosting also easily frosted all 72 mini cupcakes. For the raspberry filling, I used the wonderful fillings that you can buy from the Prepared Pantry.  The Bavarian Cream and the Raspberry are my favorites.  One long tube goes a very long way, and so it is very inexpensive and it keeps for a good while in your refrigerator or even the freezer.

I hate box brownies . . . but my daughters love them.

I would make the Katharine Hepburn brownies instead, but what a great idea!
