Yesterday, I tried to force myself to take down the Christmas decor that is scattered throughout the house. Usually I’m quite eager to box it up, clean up and welcome the new year!

Creamy, cheesy, crispy golden potatoes with tender chicken breasts, is perhaps my favorite home-baked comfort style meal.
It’s not a meal that I make often, but when I do . . . I enjoy every single bite. It brings back good memories. It’s the perfect main dish to serve to company!

.jpg) This bundt cake brings back the good, the bad & the miss-informed. You see, my roommates and I did a lot of baking. We went through bags & bags of sugar and flour. The apartments around us were well fed. When we slacked off, they would bring us a dozen eggs or a small bag of sugar, as a reminder that we were NOT doing our job!

When it’s hot, my appetite decreases and I find it hard to cook or bake. I purposely try to make “lighter” meals in the summertime, because my hubbie and I RUN together. Not always an easy thing to do. His stride & my stride are two different strides! His legs are at least 6″ longer, so I will just assume that I’m getting the better workout, since my legs stay with his legs. He could run me under the table . . . he just doesn’t dare!
