Jennifer - I followed the recipe to a T and got very sugary fudge–as in sugary/grainy. Any suggestions? It still tasted okay, but the texture was not smooth at all.

Hi Jennifer,

Gosh….that has happened to me before when making fudge.
Make sure that if you try it again, you do not touch or stir the mixture until it’s cooled as the recipe directions state.
Also, don’t scrape the sides of your pan.

If I see sugar crystals forming on the sides of my pan, I take a pastry brush and very hot water and melt the sugar away.
Also, make sure that you are using a good HEAVY large pot….I love the cast iron Porcelain Martha Stewart pots….they are well work the money.
Macy’s always has great sales on them. They will last forever!!!

There is a restaurant in Harbour Town on Hilton Head Island called The Crazy Crab that makes both. They are so absolutely mouth watering, melt in your mouth delicious. I just used Cool Whip. It’s really quite yummy even with Cool Whip instead of real Whipped cream. The frosting holds up well.

Jonna - Hi Heather,

I used a Wilton 1M tip. It’s my favorite! I guess the one thing that is really important is to only fill your tins 2/3 full….don’t overfill, or they won’t be pretty. I use a large ice cream scoop for the regular size cupcake.

Phyllis - Been making these for years! They are great for Christmas. If you want to fancy them up, you can cut on the diagonal, sprinkle the edges with colored sugar and use anything to fill it. I use grape jam and peanut butter chips with chopped peanuts, or cherry jam with mini chocolate chips. You can use about anything.
