CHEESY POTATOE, BACON CHICKEN FRY

Once, when I was cutting a clients hair, we got on the subject of dinner. She proceeded to tell me …”I don’t cook.” I didn’t believe her, but she was very serious. “How do you get a way with that?”…..I asked her. I assumed she really meant that she cooked every now and then. I learned that she really meant…..”I DON’T COOK!”
Most of us, can’t afford to eat out every night. One of the things we enjoyed as a family, was eating dinner together. Now, it’s just my husband and I, and I’ll confess…..it’s difficult cooking for just two people.

I have a husband who eats very little during the day, so I need to make a large dinner every evening. I don’t mind…..after all, what else do I have to do!  PROBLEM: I don’t necessarily like to eat a large meal….late at night, and then hop in to bed. I can feel it turning to cellulite! Ocasionally, I have to hide some of my food under the table……Not Really! Well…..maybe.

Ocasionally, I’ll show you what was served at the “Warnke Restaurant,” as well as the recipe, and how to prepare it.

This dish, is on the menu for tonight:
 Cheesy Chicken, Bacon & Crispy Fried Potatoes
Yes, I know, it’s an artery clogger! Just run on your treadmill for 2 hours after eating. You first must understand, that last night we had Chicken, mashed potatoes & gravy, cheddar beans and garlic bread. So….I have left over chicken. This is a great way to use up that chicken.
This is one of our favorites!
HERE ARE THE INGREDIENTS:
Grated Cheddar cheese,
Crispy Fried Bacon

Thinly slice potatoes
I like to leave the peel on (opt)
(Plan on at least one potatoe per person)
Thin strips or diced Chicken Breasts
Diced sweet onion, or Onion Powder
A Sprinkle of Brown Sugar
Salt & Pepper to taste
In a large skillet, fry your bacon until crispy. (I used 4 strips of bacon for 2 people, you will want to figure on at least one slice per person. Once it is crispy…..break into small pieces, and set aside on paper towel.
Save at least 1 Tablespoon of that bacon grease, and discard the rest. Add at least 2 Tablespoons or more of olive oil to your skillet. You can also use Crisco oil, but olive oil is better for you.
Turn that skillet up to high. My skillet has a temperature gauge. I turn it up as far as it will go. If you are using the stove top, I would suggest a medium High heat. Fry the heck out of those spuds. Watch carefully, and flip the potatoes over to the other side when they are golden brown.
My husband doesn’t care for onions, but I use a generous amount of Onion Powder over the potatoes while they are frying. Season also with Salt & Pepper. Once the potatoes are golden brown, I sprinkle a little Brown Sugar over the top….about 1 Tablespoon…….Really!
(optional) Toss those potatoes again and make sure they are crispy.
Now sprinkle your chicken and bacon pieces or the top evenly, and top that with grated cheddar cheese. The picture below, is the finished (up close & personal) product! *Note: I prefer more grated cheese than my husband does………..so if you are like me,……smother it with melted cheese*
I served this dish with a nice Green Salad & Garlic Bread.
For dessert…….We ate licorice!
