This delicious bundt bake recipe comes from an old college roommate. (Maija lisa N.) Her family is from Finland, and this is a popular dessert in their homeland. It is scrumptious! We lived on sugar cookies & Sokeri Kakku in my apartment!
Sokeri Kakku
Crumble together with pastry blender:
1/2 lb. soft butter
3 Cups flour
2 cups Sugar
Stir together:
3 beaten eggs
1 can evaporated Milk (like Sego)
2 tsp. Almond Extract
2 tsp. Baking powder
1/2 tsp. salt
Add egg mixture to above crumble, and blend well. Divide batter into almost equal portions. Leave a little more generous portion in the vanilla batter bowl. Leave one bowl of batter as is, and add Cocoa powder to the other batter.
Add Cocoa powder, (*I use Hershey’s Cocoa powder) to taste. Start with approximately 1/8 to 1/4 cup, & blend well. If you desire it to be a darker chocolate add a little more.
Grease and flour bundt pan Carefully pour vanilla batter, evenly in bundt pan.
Now, add chocolate batter on top of the vanilla batter. With a knife carefully swirl the chocolate into the vanilla, leaving swirls throughout.
Bake in 350degree oven, until knife or fork inserted through through the middle comes out clean. About 50 to 55 min. Let cool for about 10 minutes in pan, then invert cake onto cake platter. Drizzle warm cake with vanilla glaze.
VANILLA GLAZE
1/2 cup butter, softened
2 cups powdered sugar
2 tablespoons milk
2 teaspoons vanilla
Cream above ingredients together. Add additional milk if needed, so that you can drizzle the glaze over the warm cake.
