CHEESY BROCCOLI-CAULIFLOWER CASSEROLE

Here are 2 variations of a really great dish. One uses soups, and the other uses a cream sauce that you make yourself. Both are great! I really like cauliflower, however my husband does not, so if I make this…..I have to eat it all by myself, or leave out the cauliflower. It’s not a problem…..it’s really good.

I like to use diced ham or chicken with this casserole, to make it a full meal. If I add ham or chicken, I usually double the sauce recipe on #1, and add an extra can of soup to recipe #2 I like it quite saucy!

Variation #1
Ingredients:
 1 tablespoon butter
 4-1/2 teaspoons all-purpose flour
 1-1/4 cups milk
 1 cup shredded cheddar cheese
 1/3 cup grated Parmesan cheese
1 package (14 ounces) frozen broccoli florets, thawed
2-1/4 cups frozen cauliflowerets, thawed
 1 cup cubed fully cooked lean ham
Topping:

1/2 stick melted butter
3 tblsp of Parmesan or Asiago cheese
1 cup of bread crumbs

DIRECTIONS:

 In a saucepan, melt butter. Stir in flour until smooth; gradually add the milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat. Add cheeses; stir until melted. Place vegetables in a 2-qt. baking dish coated with cooking spray; sprinkle with ham. Pour sauce over ham. Sprinkle grated cheese over the top. Toss together the Asiago or Parmesan cheese, bread crumbs & melted butter. Sprinkle evenly over top of casserole. Bake at 350º for 35 TO 40 minute.

Variation #2
 YOU WILL NEED:
1 can cream of celery soup
1 cup mayonnaise
1 egg – beaten 1 large onion, chopped (opt)
*I season with Onion Powder instead
2 packages frozen chopped broccoli (10 oz)
1 package frozen cauliflower (10 oz)
12 oz. shredded Cheddar cheese
1/2 tsp salt
1/4 tsp pepper

Topping:

1/2 stick melted butter
 3 tblsp of Parmesan or Asiago cheese
1 cup of bread crumbs

DIRECTIONS:

Spray a large casserole dish with non-stick spray. In a mixing bowl combine soup, mayonnaise, onion and beaten egg. Place partially thawed broccoli and cauliflower in another large mixing bowl. Stir in onion, soup, mayonnaise and egg mixture. Add 8 oz. cheese and seasonings and mix well. Pour mixture into prepared casserole dish. Sprinkle grated cheese over the top. Toss together the Asiago or Parmesan cheese, bread crumbs & melted butter. Sprinkle evenly over top of casserole. Bake at 350º for 35 – 45 minutes.
