This is one of my favorite salads. It’s hard to believe that something so simple to prepare, could be so Good!
YOU WILL NEED:
1 large bunch fresh broccoli (about 1 pound)
stems removed and cut in flowerets or small pieces
4 – 5 fresh tomatoes, wedged
2 cups grated cheddar cheese
1 red onion, thinly sliced
1/3 cup sliced black olives (opt)
1 package Good Seasons Italian Salad dressing
1 teaspoon sugar
1/4 tsp. black pepper
Toss together broccoli, tomatoes, cheese, olives and onion. Make dressing according to package directions and add sugar. Pour dressing over all. Marinate at least two hours, preferably several hours in advance, stirring gently, occasionally. Makes 6 to 8 servings.
